Basic properties

Sodium diacetate is a molecular compound of sodium acetate and acetic acid, associated by short hydrogen bonds. White hygroscopic crystalline powder, non-toxic, with an acetic acid smell, easily soluble in water (1g/ml) and ethanol. It decomposes when heated to above 1500°C, emitting smoke and a pungent sour smell. The pH value of the aqueous solution is 4.5-5.0 (10% aqueous solution).
